These Mini Chicken Meatballs with Peanut Sauce is a great recipe for the spring when you don’t feel like spending tons of time in the kitchen, slaving over a hot stove!
They are made with organic chicken, cilantro, scallions, garlic and tamari or soy sauce – and the bonus is they are gluten-free and kid-friendly!
Next, I made a delicious Peanut Sauce to serve alongside the Chicken Meatballs. Finally I finished off the platter with thinly sliced raw carrots, purple cabbage, arugula and spicy pickeled red peppers, all tossed with lime, rice vinegar, salt and pepper. The meatballs can be served with the peanut sauce Green Schug Hot Sauce, or Magical Green Sauce.
You can make everything ahead of time then reheat it, or I like to serve it at room temperature. You could also place all the ingredients into a pita or onto a bun and be done with it.

Ingredients
Meatballs
- 1 pound ground chicken thighs
- 5 large scallions, sliced thinly
- 1/3 cup sliced cilantro leaves
- 1 egg
- 1 tablespoon olive oil
- 2 tablespoons low sodium soy sauce
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper
- Vegetable oil for cooking
Peanut Sauce
- 1/2 cup peanut butter (unsweetened)
- 2 tablespoons rice vinegar
- 2 tablespoons low sodium soy sauce
- 1 teaspoon brown sugar or honey (optional)
- 2–3 teaspoons Shiracha
- 1/2–3/4 cups water
- Salt and pepper to taste
Instructions
Meatballs
- Add all ingredients to a large mixing bowl. Mix everything together with a fork.
- Form meatballs, approximately 1- 1-1/2 inches, rolling them back and forth between your hands. Put water on your hands the keep the dough from sticking to your hands.
- Place rolled balls onto a sheet of parchment paper.
- Heat a large skillet.
- When hot, place 8-10 meatballs into skillet and brown for 4-5 minutes then flip and cook for another 4-5 minutes until nicely browned.
- Place cooked meatballs onto a plate lined with paper towels then continue to cook remainder of meatballs.
Peanut Sauce
- Place all ingredients except water into food processor or blender and mix.
- Add 1/2 cup water then add additional water as needed.
