Meatballs with Peanut Sauce

A quick and easy recipe for the whole family!


Ingredients

Meatballs

  • 1 pound ground chicken thighs
  • 5 large scallions, sliced thinly
  • 1/3 cup sliced cilantro leaves
  • 1 egg
  • 1 tablespoon olive oil
  • 2 tablespoons low sodium soy sauce
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper
  • Vegetable oil for cooking

Peanut Sauce

  • 1/2 cup peanut butter (unsweetened)
  • 2 tablespoons rice vinegar
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon brown sugar or honey (optional)
  • 23 teaspoons Shiracha
  • 1/23/4 cups water
  • Salt and pepper to taste

Instructions

Meatballs

  1. Add all ingredients to a large mixing bowl. Mix everything together with a fork.
  2. Form meatballs, approximately 1- 1-1/2 inches, rolling them back and forth between your hands. Put water on your hands the keep the dough from sticking to your hands.
  3. Place rolled balls onto a sheet of parchment paper.
  4. Heat a large skillet.
  5. When hot, place 8-10 meatballs into skillet and brown for 4-5 minutes then flip and cook for another 4-5 minutes until nicely browned.
  6. Place cooked meatballs onto a plate lined with paper towels then continue to cook remainder of meatballs.

Peanut Sauce

  1. Place all ingredients except water into food processor or blender and mix.
  2. Add 1/2 cup water then add additional water as needed.
