I am fond of layering spices and seasoning at each step of the preparation of a recipe. The Magical Green Cilantro Sauce is the last element of that layering process and will be your go-to when you want to elevate a quick and easy meal to a new level.
You can prepare this sauce ahead of time, it only takes 10 minutes and will last about 3-4 days in the refrigerator. Just pour it on leftovers and you will be thrilled with the results. Sometimes I will add white or red wine vinegar or additional lime juice to thin it out and drizzle it over a crisp chopped vegetable salad.
Depending on how you want to use this sauce, it can have a Mexican flair or for an Asian flavor profile, I will add toasted sesame oil (La Tourangelle) is one of my favorite brands).
Again, this cilantro sauce contains so many flavors – salty, sweet, tart, acidic, spicy and it only takes 10 minutes to turn boring into the bomb.

Ingredients
- 2 bunches of cilantro
- 1/2 cup of olive oil
- 1/4 cup of rice vinegar
- 2 cloves of minced garlic
- 1/2 teaspoon of red pepper flakes
- Juice from 1 lime
- 1 teaspoon of honey
Optional:
- 2 teaspoons of toasted sesame oil
Instructions
- Place all ingredients in a food processor or a blender and mix until smooth. Add salt and pepper to taste.
Notes
You may want to add additional lime or rice vinegar after tasting. It is always slightly different and it is important to make adjustments to your taste.
White balsamic vinegar works well in this preparation too.
