Why will you love this Cool Asian Cucumber Salad?
1 – It’s ridiculously easy to make – it comes together in five to ten minutes.
2 – It makes a great summer side dish for fish or a light sandwich.
3 – It contains just a few clean ingredients and tastes great!
This Cool Asian Cucumber Salad is something I know I can make on a work day when I have no time but need a quick lunch, I’m always looking to incorporate more vegetables into my meals so I will throw this together along with a light sandwich and voila, I’m eating in 10 minutes.
To add some zip to this little unsuspecting salad add a little of this chili oil or something similar.
This dish would be great served with the Grilled Chicken and Vegetables.

Description
Cool and refreshing!
Ingredients
- 1 English cucumber or 4 Persian cucumbers, peeled
- 4 green onions
- 1 carrot
- 1/4 cup rice vinegar
- 2 teaspoons of roasted sesame oil
- Red pepper flakes
- Sesame seeds, white or black
- Salt and pepper
Instructions
Use a mandolin, if you have one and thinly slice the cucumbers and carrots.
Slice the green onions thinly using the white and 1/3 of the green.
Place in bowl then add vinegar, oil and red pepper flakes. Mix everything together, add salt and pepper to taste then sprinkle with sesame seeds.
Let marinate for 15-30 minutes or more, then serve.
Notes
Options
You can always add a few dashes of chili oil for a little more heat.
If you do not have rice vinegar, try white balsamic vinegar.
