Cool Asian Cucumber Salad

Ingredients

Scale
  1. 1 English cucumber or 4 Persian cucumbers, peeled
  2. 4 green onions
  3. 1 carrot
  4. 1/4 cup rice vinegar
  5. 2 teaspoons of roasted sesame oil
  6. Red pepper flakes
  7. Sesame seeds, white or black
  8. Salt and pepper

Instructions

Use a mandolin, if you have one and thinly slice the cucumbers and carrots.

Slice the green onions thinly using the white and 1/3 of the green.

Place in bowl then add vinegar, oil and red pepper flakes. Mix everything together, add salt and pepper to taste then sprinkle with sesame seeds.

Let marinate for 15-30 minutes or more, then serve.

 

Notes

Options
You can always add a few dashes of chili oil for a little more heat.
If you do not have rice vinegar, try white balsamic vinegar.
