Grilled Chicken & Vegetables

Description

A great summer meal.


Ingredients

Scale
  • 11/2 pounds of boneless, skinless chicken thighs
  • Marinade for chicken
  • 1/4 cup olive oil
  • 3 tablespoons of balsamic vinegar
  • 2 tablespoons of soy sauce
  • 3 cloves of garlic minced
  • 1 teaspoon of smoked paprika
  • Salt and pepper

Vegetables

  • 3 zucchinis
  • 3 bunches of baby broccoli
  • 3 tablespoons of olive oil
  • Salt & pepper

Instructions

  1. Rinse and pat dry the chicken pieces, place into a large bowl.
  2. Add all other ingredients to the chicken and mix well. Let marinate for 15-20 minutes.
  3. Brush vegetables with olive oil then add salt and pepper.

Heat your grill.

Place chicken on the grill and cook for 5-6 minutes until they brown then flip. Cook another 5-7 minutes. They will be ready when the  internal temperature reaches 165º for chicken thighs.

Place a large piece of aluminum foil onto the open side of the grill. Place all vegetables on the foil in a single layer and cook for about 10 minutes, flipping around so they do not burn.
